Our Taste of West, North & Mid Cork Tapas Platter

Who doesn't love tapas? They are the ideal, chilled out , perfect for entertaining dish, fit for any occasion. But where did this delectable dish come from and gain such popularity?

Tapas are Spain's greatest food invention. "Eat when you drink, drink when you eat" is the philosophy. Spanish men traditionally drink outside the home and rarely alone. They are not meant to be a meal (although a ración is a substantial portion). One tapa per person and a different one with each drink is the idea, then everyone enjoys tasting and sharing. Tapas food is real food - good local ingredients presented with flair.

Here at the Castle Hotel Macroom, we too offer a deliciously unique tapas platter, involving local ingredients from the finest producers in our locality.

Jack McCarthy’s of Kanturk Black Pudding
When Queen Elizabeth visited Ireland in 2011, McCarthy’s black pudding was served at the state banquet. It was chosen because of the quality and flavour imparted by the fresh blood from free range pigs, Macroom Pinhead Oatmeal, fresh cream and butter from North Cork Dairy and Midelton Special Reserve Whiskey.

Follain Chutney
Based in Coolea, Macroom, Co. Cork, making Fresh Fruit Preserves, Marmalades, Jams, Relishes, Salsas and Chutneys. They create these delicious products from 100% natural ingredients. They also avoid the use of any obscure flavourings, additives or preservatives common to so many of prepared foods on the market today. A 100-year old Irish recipe, passed on through several generations, was the secret to Folláin’s first product, a chunky Grapefruit Marmalade which was launched back in 1983.

Coolea Farmhouse Cheese
Coolea Cheese is made from a very old Dutch Gouda recipe. Using high quality pasteurised cows milk, Coolea Cheese is ripened to a minimum of two months. It's texture is semi-hard to hard, when matured up to 18 months it’s taste becomes sweet, almost toffee like. Coolea Cheese is now sold all over Ireland, the United Kingdom, Wales, Scotland and their cheese mongers distribute the cheese all over the world.

Ardrahan farm House Cheese
handmade by Mary Burns at Ardrahan House Kanturk Co. Cork. This mature cheese exhibits all the classic characteristics of A farmhouse semi soft cheese. Its' pronounced aroma indicates maturity and correct development.

Macroom Oatmeal
This is used to make our adored brown soda loaf here in the Castle Hotel. It is stoned ground from freshly roasted oats and manufactured at Walton's Mill Macroom Co. Cork. Macroom oatmeal is favoured by highly acclaimed food Critics and chefs such as Darina & Myrtle Allen of Ballymaloe House and John & Sally Mckenna of the Bridgestone Guide to Good Food.

Gubbeen Chorizo Provensal
Artison made by Fingal Ferguson, using only quality ingredients, time and care - a marriage of traditional and modern flavours. This is produced in Schull Co. Cork Ireland.

Toonsbridge Mozzarella

Ireland's only buffalo mozzarella producer resides in the west cork area of Toonsbridge, just outside Macroom. Johnny Lynch's creamery is the place where this delicious, mouth watering soft cheese is produced, along with the help of cheesemaker Sean Ferry and Toby Simmonds of the Real Olive Company.

With all the talk about “Staycations” in the press these days, We here at the Castle Hotel thought it would be appropriate to shed light on the many wonderful sites that the surrounding areas of the hotel have to offer to visitors of our wonderful region.

Summer Walking Weekends
Walking is the perfect way to explore the Lee Valley. Encircled by the Shehy, Derrynasaggart and Boggeragh Mountains there are miles of wonderful walking with stories to be told.

We offer a fantastic walking package which includes 2 nights luxurious accommodation, 1 evening meal & complimentary use of The Leisure Club to ease out those tired limbs!

The next available Walking Weekend Dates are: August 12-14 and September 16-18.The weekends will consist of three walks:

Friday evening: 8.00-9.00pm: Introductory tour of Macroom by streetlight: See where Art O Leary met his love Eibhlan Dubh Na Chonaill and where William Penn lived.

Saturday: 9.00 - 4.00pm: The Paps. This twin-peaked mountain is dedicated to the Tuatha de Danaan Goddess, Dana or Anu and is a focal point of Celtic spirituality. This is a lovely climb with ascent from 200m to 694m. 6-7 miles.

Sunday: 9.00 - 12.00pm: A trek in the post glacial oak forest of the Gearagh near Macroom town with information on its formation, special habitat characteristics and human story.

Catherine Ketch of Lee Valley Walking has been running guided tours and walks in the Macroom area for the past ten years. A trained local guide she has an MA in Geography as well as a keen interest in local history and environment. Route may change due to weather conditions. Hotel Room Made of Chocolate!

So we've seen it all now...................... A hotel in Paris has just released this photo showing The Karl Largerfeld Hotel Room made entirely of chocolate! (Including the male model, painted with the sweet stuff!).

Largerfeld has been working with the hotel and the ice-cream company Magnum in creating this design. But sadly NO, you can't sleep here! (but how cool would it be to stay here..... just to take a bit of the armchair if one got peckish!) Sounds like the things dreams are made of!

Head Chef Pat Ryan Makes Easter Easy!

Roasted Rack of Easter Lamb

Serves 4

Ingredients:

* 1/2 cup fresh bread crumbs
* 2 tablespoons minced garlic
* 2 tablespoons chopped fresh rosemary
* 1 teaspoon salt
* 1/4 teaspoon black pepper
* 2 tablespoons olive oil
*
* 1 (7 bone) rack of lamb, trimmed
* 1 teaspoon salt
* 1 teaspoon black pepper
* 2 tablespoons olive oil
* 1 tablespoon Dijon mustard

Method:

1. Preheat oven to 450 degrees F (230 degrees C). Move oven rack to the center position.
2. In a large bowl, combine bread crumbs, garlic, rosemary, 1 teaspoon salt and 1/4 teaspoon pepper. Toss in 2 tablespoons olive oil to moisten mixture. Set aside.
3. Season the rack all over with salt and pepper. Heat 2 tablespoons olive oil in a large heavy oven proof skillet over high heat. Sear rack of lamb for 1 to 2 minutes on all sides. Set aside for a few minutes. Brush rack of lamb with the mustard. Roll in the bread crumb mixture until evenly coated. Cover the ends of the bones with foil to prevent charring.
4. Arrange the rack bone side down in the skillet. Roast the lamb in preheated oven for 12 to 18 minutes, depending on the degree of redness you want! With a meat thermometer, take a reading in the center of the meat after 10 to 12 minutes and remove the meat, or let it cook longer, to your taste. Let it rest for 5 to 7 minutes, loosely covered, before carving between the ribs.

The Castle Hotel, Macroom will host a Royal Wedding Brunch to celebrate the wedding of Prince William and Kate Middleton on Friday 29th April in aid of Down Syndrome Cork. This unique charity event will take place from 10.30am in the Ardilaun Banqueting Suite of the Castle Hotel.

Guests will be treated to teas, coffees and scones with clotted cream as the Royal Wedding is showcased on the Big Screen from 11am. It is estimated hundreds of thousands of onlookers will line the streets of London as Berkshire-born Kate Middleton finally marries her prince in Westminster Abbey where 15 Royal Weddings have already taken place.

Over 1,900 people have been invited to the Royal Wedding which will be an even grander event than that of Charles and Diana’s wedding in 1981. Among the celebrities who reportedly received the gilded invitations are David Beckham, with whom William worked closely with on England's bid for the 2018 World Cup, and his wife, former Spice Girl Victoria Beckham. Other rumoured invitees include Elton John, a friend of William's late mother, Diana, and Kanye West, whom William selected to perform at a 2007 tribute to Diana. Irish rugby star Brian O’Driscoll and his wife Amy Huberman as well are expected to attend, if Brian’s rugby commitments don’t clash!

Speaking about the event, Owner of the Castle Hotel Don Buckley said, “There has been so much interest in the Royal Wedding that we thought we should do something to commemorate the day. Charles and Diana got married in 1981 when we were 30 years in business and this Royal Wedding takes place when we’re 60 years in business so we thought it would be fitting to do something around it and, at the same time, give something back to a fantastic charity”.

"Down Syndrome Cork is such an incredible charity that we thought it would be fitting that we give something back to an organisation which has done so much for so many people in the region.”

Macroom has a very exciting program of activities planned for The St Patrick's Day Celebrations. Great plans are again in the pipeline for the celebration of our national festival in Macroom. While St. Patrick’s Day, Thursday, March 17, will be the focal point, aweek of fun and events is planned for the entertainment of locals and overseasvisitors. The Parade is scheduled for 3.30p.m. and will feature all the Disney characters. Bands from Philadelphia, Bandon, Ballingeary, Cullen and Mayfield will keep feet tapping. Our own All Ireland Champions, Fintan Goold and Sean Kiely are 2011 Parade Grand Marshals. An Artand Craft fair and Fireworks are other welcome features and the Pot Belly Folk Groupwill entertain in the Castle Hotel from 9.30p.m.

Castle Hotel's Pat Ryan's 'Easy' Pancakes!

It's Pancake Tuesday! Here's our head chef Pat Ryan's guide to quick and easy pancakes!

Ingredients:

1 large egg, 5 teaspoons sugar, 1 1/3 cups milk, 1 cup flour, 3/4 teaspoon baking powder, 1 1/2 tablespoons vegetable oil (optional)

Directions:

1.In a bowl or mixing jug, whisk together egg, sugar and half of milk (2/3 cup).

2. Add the flour and mix throughly.

3. Then add remaining milk (2/3 cup) and baking powder. It should be the consistency of thick cream.

4. (Optional): Add 1-1/2 tsp oil if you have trouble with sticking.

5. Beat until smooth.

6. Pour about a soup spoon sized amount onto a pre-heated lightly greased frying pan or griddle (You will need to start about medium high heat but after a few rounds you will need to drop it back to medium).

7. Flip with a spatula when the top is all bubbly (should be a lovely golden colour), and cook the other side (~45 seconds/side depending on stovetop).

8. Remove from pan and pile up on a plate (cover with a paper towel until served).

9. Serve with whatever you like and enjoy.

The Castle Hotel Celebrates 60 Years of One Special Day with a Unique Vintage Wedding Fayre

We're very busy this week putting our final touches to our Vintage Wedding Fayre, taking place on February 27th from 12 to 6pm.

As part of our 60th anniversary celebrations, the Castle Hotel in Macroom, which specialises in intimate bespoke weddings for up to 120 people are organising a Vintage Wedding Fayre!

On the day there will be the opportunity to go back to bygone eras with a showcase of Bridal Fashion through the decades, styled by one of Ireland’s top fashion stylists Sonja Mohlich. There will also be a trip down memory lane, as we will launch a collection of unique memorabilia from the hotel’s 60 year history on the day.

Over it’s 60 year history The Castle Hotel has established itself as one of the leading venues for people searching for a unique location for their wedding, many of whom choose the conveniently located Gougane Bara Church for their wedding ceremony – classed as one of the most romantic churches in the Ireland.

Co-Owner Don Buckley, who’s parents established the hotel back in 1951 said, “We are so proud to be celebrating 60 years in business this year and we felt it would be a lovely way to commemorate 60 year’s of hosting the most important days of people’s lives by holding a Vintage Wedding Fayre. Chocolate Waffles

Prep Time: 5 Min

Cook Time:10 Min

Ready In:15 Min

Servings : 5

Ingredients: 1 1/2 cups all-purpose flour, 3 teaspoons baking powder, 1/2 teaspoon salt, 1/2 cup white sugar, 3 tablespoons unsweetened cocoa powder, 1 cup milk, 2 eggs ,4 tablespoons butter, melted, 1 tablespoon butter, softened, 3/4 cup confectioners' sugar, 1/2 teaspoon vanilla extract, 1 teaspoon milk.

Directions: Preheat waffle iron. In a large mixing bowl, stir together flour, baking powder, salt, sugar and cocoa. Stir in milk, eggs and butter until mixture is smooth. To make hard sauce: stir together softened butter, confectioners' sugar, vanilla extract and milk. Sauce should be fairly stiff. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot with sauce!

This year, The Castle Hotel is celebrating 60 Years in The Buckley Family. As part of the "Diamond Celebrations" , a Gala Staff Re Union is planned for all of those people who have worked full time at The Hotel since 1951.

"We are currently trying to get the names & contact details of as many people as possible who have worked full time in the Hotel with the Buckley Family" , said Don Buckley."Without the hard work of all of these people the Hotel would not be where it is today. Head Chef Pat Ryan's Top 10 Healthy Eating Tips for 2011:

1. Increase your fluids
Aim to drink 2 litres of water per day as a minimum.
2. Eat breakfast every day
Drop into The Castle Hotel to kick start your day!
3. Increase your fibre
Why not try extra fruits, vegetables, whole grains, beans and lentils.
4. Decrease your salt
Always read the label!
5. Get your ‘five a day’
Eat at least 5 fruit and vegetables per day.
6. Reduce your saturated fat
Reduce your meat and dairy to a minimum. Increase your beans and lentils as an alternative source of protein.
7. Reduce your trans-fat
These are found in fast food and processed foods so make it yourself at home or sample our home-cooking at The Castle!
8. Increase your unsaturated fat
Found in nuts, seeds, avocadoes, and olive oil.
9. Increase your omega-3 oil

Something to Mull Over!

Here's another great Christmas Tip from our Castle Hotel Kitchen!

An easy mulled wine recipe for the festive season, brimming with Christmassy aromatic citrus spice!

Ingredients:

1 bottle red wine
60g/2oz demerara sugar
1 cinnamon stick
grated nutmeg
1 orange, halved
1 dried bay leaf

Preparation:

Put the wine in a saucepan with the orange, sugar, bayleaf and the spices.
Heat gently until the sugar has dissolved. Taste to see if you want the wine sweeter, and add more sugar to taste.
Strain into heatproof glasses and serve at once.

No Irish Christmas would be the same without this rich cranberry dish. It's more than a sauce and is excellent the day after on turkey sandwiches!

Ingredients:

1 package of fresh cranberries, 2 packets of lemon jelly (you could use 1 lemon and 1 orange), 1 cup chopped pecans, 1 can crushed pineapple (drained), 2 cartons of cream cheese (at room temperature), 2 cups sugar.

Method:

Roughly chop the cranberries, or blitz them with a food processor, and put into a bowl with the two cups of sugar poured and mixed through them. Leave for 30-45 minutes. Mix up both packets of jelly as per packet instructions and add to the cranberry mixture along with the drained pineapple and chopped pecans. Pour half of the jelly mixture into a shallow dish and allow to set in the fridge. Once set, smooth the softened cream cheese over the set jelly until covered and top with the rest of the jelly mixture. Put this into the refrigerator and allow to set. Serve with turkey or an rich meat such as goose or game. Serves: 6 - 8

At The Castle, we're very busy getting ready for Christmas, with decorations going up this week and the kitchen very busy with Christmas Puddings! Here's a sneek at Sarah's secret recipe:

Prepare your pudding early so the flavours have time to develop. On Christmas Day simply take it out of the fridge and steam away.

Ingredients: 1 1/2cups sultanas (golden raisins),1 1/2 cups chopped raisins, 3/4 cup currants, 1 cup pitted and chopped prunes, 3/4 cup (145 g) chopped dried apricots, 1/2 cup brandy, 1 cup (100 g) all purpose flour, 2 tsp baking powder, 2 tsp ground Mixed Spice , 3/4 cup firm butter, 1/2 cup firmly packed brown sugar, 2 cups fresh breadcrumbs, 1 green apple, peeled, cored, grated, 1/4 cup golden syrup, 3 eggs, beaten.

Method:

1 Combine sultanas, raisins, currants, prunes, apricots and brandy. Cover and let stand overnight.
2 Sift flour, baking powder and mixed spice into a bowl. Add butter, sugar and breadcrumbs. Rub the butter through the dry ingredients with your fingertips.
3 Add apple, golden syrup, eggs and fruit. Mix well.
4 Spoon into a greased and baselined pudding basin. Cover with a greased sheet of baking paper, aluminium foil and another sheet of baking paper. Secure with wetted string. Place in a saucepan of boiling water (ensure the water is one-third up the side of the basin).
5 Cover pan and gently boil for 4 hours (check water every 30 minutes). Carefully remove pudding basin from steamer. Cool 15 minutes before turning out.
Cool and wrap in plastic film and store in the refrigerator.

Christmas Day: allow pudding to return to room temperature, then steam for 2 hours. Serve with custard.

A Little Light Relief!

After a day of bad news in Ireland yesterday, I though we might need a little light relief! The hotel world is abundant with funny tales and laughs. Here are a few I found:

This request reached a Mountain Resort, St Moritz, Switzerland: 'I would very much like to bring my dog with me. He is well-groomed and very well behaved. Would you be willing to permit me to keep him in my room with me at night?' An immediate reply came from the hotel owner, who said, 'I've been operating this hotel for many years. In all that time, I've never had a dog steal towels, bedclothes, silverware or pictures off the walls. I've never had to evict a dog in the middle of the night for being drunk and disorderly. And I've never had a dog run out on a hotel bill. Yes, indeed, your dog is welcome at my hotel. And, if your dog will vouch for you, you're welcome to stay here, too.'

At the Savoy in London, Rudi Schreiner, reception manager in the 1970s and later general manager in Vienna, remembers a particularly attractive singer who was on stage during the days of supper cabaret at the Thames Foyer. When she began a particular number from Cabaret, all the guests would stare at the stage. When she came to the bit which requires a fair degree of upper torso movement while singing ‘Money money money . . . money money money . . .’ followed by a sound on the cymbal denoting an imaginary silver coin falling into her juggling cleavage, everyone was spellbound… Absolutely everybody, including the young waiter who was serving a large table of fourteen right next to the stage. Unfortunately, although he hadn’t put out any plates, he calmly started to serve the main course straight onto the tablecloth. Apparently no one noticed until the gravy was poured!

Our Very Own Priest!

As you may know by now...........'We Love Weddings' at The Castle Hotel. The red carpet......champagne on ice.......music filling the lobby.......candlelight hallways.......but above all..........we even have our own priest!

There are so many jobs to tick off a bride's To Do List, but finding a priest is one The Castle can do for you!

His name is Fr. Timmie O Connor, a retired missionary priest, born about 7 miles from Killarney in Co. Kerry near the world famous Gap of Dunloe. On finishing school, he worked with us as a bar tender for six years in the Castle Hotel, from 1961 to 1967. Since then he has remained a very close friend of The Castle and The Buckley Family.

On leaving The Castle he completed nine years of study to enter the priesthood, two of them in Scotland and two of them in Cork, where The Rochestown Park Hotel is now, and the remainder in St Patrick’s Seminary Kiltegan Co. Wicklow. He was then ordained a priest with the St. Patrick’s Fathers and worked for some years in Sao Paulo in Brazil, learning to speak Portuguese and then worked as vocations director for the St. Patrick’s Fathers. At the invitation of the Missionary Co-op, he visited The US and preached for about ten weeks each year for five years along the East Coast and the mid west and up into Canada.

For about the last twenty two years Fr Tim has worked in three different parishes in Ireland, in Kilsheelan outside Clonmel, for two years; then in Killavullen near Mallow for nine years and finally in Coachford for ten years. Now retired, he is concentrating on Pastoral work including weddings and renewal of wedding vows; mostly but not exclusively in St. Finbarr’s Oratory Gougane Barra and is on the solemnisers list with the civil registrar. Fr Tim really enjoys the marriage ministry as it’s always a joyful and happy occasion and trys to express that happiness in the religious ceremony.

Musgrave Triathlon - September 4th

The annual triathlon fundraising event is to be held in Farran Woods Cork on September 4th and The Castle Hotel are providing excellent accommodation rates for the weekend in question.

The past seven years has seen the Triathlon raise nationally €2.2million for Our Lady's Hospital for Sick Children, Crumlin and the Irish Cancer Society. The competition consists of a three person relay team competing in an 800m swim, 33km cycle and a 10km run.

There is no denying that each year the competition increases with new SuperValu and Centra stores entering from all over Ireland.

When you think of a bride, what do you think of first? The dress, the hair, the shoes? Actually, the single most definable aspect of bridal attire is the veil. Veils have been used by brides for thousands of years.
In the ancient world, a veil was worn to protect the bride from evil spirits. In later years, it became a symbol of the bride’s innocence and purity. In some cultures, it’s even been used to mask the bride’s identity from her future husband! In modern times, however, the veil has become a fashion accessory, one that a bride chooses according to her dress, personality, and wedding theme. The veil, this year, emerges as a hot fashion trend with the birdcage veil leading the way.What is a birdcage veil?
It is a short veil that extends to just over the chin. It is made of French, Russian, or English netting. The size of the squares in the netting is what differentiates the three types, with French being the tightest weave while the English being the largest.
A birdcage veil can be seen attached to a small hat or attached to a large hair ornament. The most modern and cutting edge way to wear this type of veil in 2010 is to crop the net to just under the eyes or to sweep it asymmetrically across the face.
The large gauge netting gives this veil a retro 30’s and 40’s look which is on the cutting edge of bridal fashion right now. What to wear with this type of veil?

All The Way From Chicago to Macroom to Get Married! An American tourist on holiday in Ireland was engaged and married within just one hour. Ryan Dunleavy arrived in Macroom from Chicago with her boyfriend, Kevin Ebbesen, who had been planning the surprise engagement and wedding for months.

A marriage proposal immediately followed by a surprise wedding ceremony would be most bride’s nightmare but no so for this American lady! Her boyfriend carefully plotted and planned the surprise with the help of Wedding Manager, John Paul Carroll, at The Castle Hotel Macroom.

Kevin began by buying his girlfriend a square foot of land in Kilnamartyra and they were coming to Macroom to see the plot, but she had her suspicions that a proposal was on the cards. What Ryan did’nt expect was a whirlwind wedding, complete with a gathering of twenty family and friends, flown in for the special occasion.

After accepting Kevin’s proposal, the couple were brought to Bealick Mill, beautifully decorated with red carpet, white ribbons and floral arches. Ryan’s sister had selected a wedding dress, jewellery and flowers for the bride and after a quick change the outdoor ceremony took place.

The party and celebrations continued long into the night at The Castle Hotel. Kevin, paid tribute to John Paul Carroll for his immense help in organising the wonderful surprise and assisting him every step of the way.

"The town that never reared a fool" — so goes the saying in Macroom, a charming hamlet in a valley on the Sullane River in the western part of Ireland's County Cork. When we visited, on a Saturday afternoon, the bar of the Castle Hotel on the main street had a mix of locals, visitors and workers, catching up on the latest sports results or breaking the journey between Cork and Kerry.
Muskerry beef sandwiches and Thai vegetable curry were available for under 10 bucks each, and accommodations at the four-star hotel combined Old World charm with modern leisure and gym facilities. One of Macroom's attractions is that it remains loyal to its commercial past, in form and function, with markets occurring every Tuesday and a livestock sale held on Saturdays.
It's also an ideal base for exploring the surrounding area, through activities such as angling and walking. The Lee Valley offers scenic glaciated terrain encompassing mountains, lakes and rivers, stretching from the Derrynasaggart Mountains on the Cork/Kerry border all the way to Cork Harbour.

Enter The "Mucky Kennels" - favourite past time of Don & Gerard Buckley of The Castle Hotel. They are a purpose buit rearing & training facility developed in 2006 by Don & Gerard Buckley. Located at Carriganine, Macroom, Co. Cork. on a 15 acre site the kennels feature:
- A 360 Yard All Weather Gallop With A Gradual Rise- Racing Kennels all with their own turn out pins- Treatment Room- American Style Rearing Paddocks 350 yards long - Purpose Built Kitchen & Feeding Room- Over head Apartment
The kennels are managed by James Kelleher who holds a private trainers license.

This week The Staff at The Castle Hotel welcomed back some dear old friends from The Isle of Man! Four golfing gents to be exact, who have now stayed with us for 17 consecutive years. They claim that in those 17 years, only 2 days of golfing have been cancelled, so maybe this record suggests our Irish Summer's are better than we think!

Other business we enjoyed this week was; a honeymoon couple from Florida, a walking group from Holland and an active retired dinner group.

Walking in The Macroom Area

Our Favourite is Gougane Barra Forest Park, in the Shehy mountains. It has great forest and nature trails suitable for all abilities. From here the river Lee begins it's journey to the sea. The forest is surrounded by mountains which has excellent hill walking.

10 Tips for Hill Walking!

Have a map: OS Discovery Series Map, ideally laminated or in a Ziploc bag.

Check the weather forecast.

Plan your route: where are you going to start and finish, what distance is it, how long will it take you, any hazards along the way such as streams, rivers or cliffs.

Get local knowledge: talk to someone who's already done the walk to find out about places of interest along the way, a good spot to stop for lunch, any access issues.

Have the right equipment: boots, waterproofs, spare clothes, hat & gloves, food & drink.

Park considerately and ask permission from the landowner to cross their land, if necessary.

Leave no trace behind you: everything from tea bags to banana skins should come back with you.

If the weather begins to put you under pressure or your own abilities are reaching their limits then recognise it as early as possible and change your route accordingly.

Take plenty of photos.

Talk A Walk on The West Side!

Castle Hotel June Walking Weekend! - Walking is the perfect way to explore the Lee Valley. Encircled by the Shehy, Derrynasaggart and Boggeragh Mountains there are miles of wonderful walking with stories to be told. Your walking package will include 2 nights luxurious accommodation, 1 evening meal & complimentary use of The Leisure Club to ease out those tired limbs!
The weekend will consist of three walks:
Friday evening: 8.00-9.00pm: Introductory tour of Macroom by streetlight: See where Art O Leary met his love Eibhlan Dubh Na Chonaill and where William Penn lived.
Saturday: 9.00 - 4.00pm: The Paps. This twin-peaked mountain is dedicated to the Tuatha de Danaan Goddess, Dana or Anu and is a focal point of Celtic spirituality. This is a lovely climb with ascent from 200m to 694m. 6-7 miles.
Sunday: 9.00 - 12.00pm: A trek in the post glacial oak forest of the Gearagh near Macroom town with information on its formation, special habitat characteristics and human story.
Catherine Ketch of Lee Valley Walking has been running guided tours and walks in the Macroom area for the past ten years. A trained local guide she has an MA in Geography as well as a keen interest in local history and environment.

One Happy Customer!

Dear Don, Ger, families and the staff of the Castle Hotel,

I don't know how you continue to get better and better every year at the Castle Hotel. Your staff is the most amazing assembly of personnel I have ever watched work. They really seem to enjoy their jobs and go out of their way no matter what the requests are. From way back in June when Rachael and I started booking the rooms to the hustle and bustle of getting the gang on the road last Sunday, your staff stood by smiling and understanding. I owe a huge thank you to Elish for her understanding when we had a misunderstanding when settling the Shannon room bill. She is ACES and one of the best front desk persons anyone could wish for. John Paul now has us all saying Rory who ? He was like a conductor of a fine symphony on the night of the gala. He stood there in the midst of what could have been mass confusion and directed everything (in two separate rooms) with a knowing nod and smile !!! As always Billy and Eileen were welcome smiles and knowing service at the bar as well as the addition of Chris and the other bartenders and servers. Theresa and the house keeping staff were AMAZING !! To turn the rooms over EVERY DAY and somehow read our minds on what we needed. Mikey and Anthony are the two most understanding and amazing night porters in the world. Some nights the lobby calmed down as breakfast was being served and they still were asking if they could serve us. NONE of this happens by chance. It takes a string, service concerned ownership that cares equally about their staff and their guests. The Castle Hotel is the GOLD STANDARD for hotels that I have visited through out the world (I have been to 14 different countries and countless states here in the US). The chef's and cooks in your kitchen are amazing artist's in their own right. The food is always fresh, delicious and served with the flare of a 5 star restaurant. Please thank every member of your staff for another amazing week and we are looking forward to bringing our own special kind of "holiday" fun back to Macroom and the Castle Hotel in March 2010 !!!

This is the policy currently promoted by The Castle Hotel & Leisure Centre in Macroom, Co. Cork, where staff wear badges saying: "Please Do Not Mention The 'R' Word", "Recession = Opportunity" , "We Think The Recession Is Nearly Over", "I Refuse To Talk About The RECESSION" etc.

Don Buckley explains, "We are not for a moment saying that the "R" word is not affecting us as it is every other business. However, we are trying to encourage customers to focus their attention away from this topic of conversation, at least while they are in the Hotel. All our staff have been asked not to bring up the "R" word in conversation but rather to talk about more positive and uplifting news. Customers seem to appreciate the effort we are making & the badges bring a smile to their face.
The challenge of keeping our business moving forward and profitable is not an easy task during an economic slowdown but we’re rejoicing in the challenge! And of course this hard work to over come such a challenge has endless benefits for our customers.
We’re concentrating more than ever to provide expertise and excellence in every department – we’re going beyond our call of duty, going further than that ‘extra mile’! We’re enjoying adding ‘more strings to our bow’!

RECIPE FOR
CASTLE HOTEL BROWN BREAD

INGREDIENTS

3/4 LBS. COARSE GROUND BROWN FLOUR1/2 LBS. WHITE FLOUR1 TEACUP OF BRANI TEACUP OF WHEATGERMI TEACUP OF PINHEAD OAT MEAL (PORRIDGE) A LITTLE BROWN (SOFT) SUGAR (Up to 1/2 Cup)1 TEASPOON BREAD SODA1 PINT OF BUTTERMILK1/2 CUP OF FLORA OIL [SUNFLOWER]1 TEASPOON OF SEASEME SEEDS (OPTIONAL)

METHOD:

Mix all dry ingredients in a bowl except for bread soda. Sieve the bread soda into mixed ingredients. Make a well in the centre.Mix Flora Oil and Buttermilk and add to dry ingredients until the mixture is good and wet.Grease bread tins. Put the mixture in tins and bake in anoven @ 150C for 1 - 1 1/4 hours. Sprinkle top with seasame seads (optional).
