The Castle Hotel Celebrates 60 Years of One Special Day with a Unique Vintage Wedding Fayre


We're very busy this week putting our final touches to our Vintage Wedding Fayre, taking place on February 27th from 12 to 6pm.


As part of our 60th anniversary celebrations, the Castle Hotel in Macroom, which specialises in intimate bespoke weddings for up to 120 people are organising a Vintage Wedding Fayre!


On the day there will be the opportunity to go back to bygone eras with a showcase of Bridal Fashion through the decades, styled by one of Ireland’s top fashion stylists Sonja Mohlich. There will also be a trip down memory lane, as we will launch a collection of unique memorabilia from the hotel’s 60 year history on the day.

Over it’s 60 year history The Castle Hotel has established itself as one of the leading venues for people searching for a unique location for their wedding, many of whom choose the conveniently located Gougane Bara Church for their wedding ceremony – classed as one of the most romantic churches in the Ireland.

Co-Owner Don Buckley, who’s parents established the hotel back in 1951 said, “We are so proud to be celebrating 60 years in business this year and we felt it would be a lovely way to commemorate 60 year’s of hosting the most important days of people’s lives by holding a Vintage Wedding Fayre. Weddings are such a way of life at the Castle Hotel, and have been for so many years, that we feel a Vintage Wedding Fayre would showcase the hotel at its best and give people a nostalgic look of weddings and the different way people celebrated their big day.”


On the day guests will have the opportunity to view the Ardilaun Banqueting Room, bridal suite and Reception areas with newly appointed Castle Hotel Wedding Coordinator Ronan Fahy. Guests can book a one to one consultation with Ronan and also avail of a complimentary Style Consultation with Sonja Mohlich, who is rarely off our screens as one of Ireland:AM’s and Xpose’s top stylists.


Sonja Mohlich will be on hand offering brides-to-be style tips for their Big Day. There will be group workshops throughout the day, open to all who choose to attend however brides-to-be can also avail of an exclusive one-to-one consultation with Sonja who has styled some of the most high profile personalities in Ireland, including The Corrs, Victoria Smurfit. Not just for the brides, Sonja works with Westlife – so can offer the Grooms to be some great fashion tips as well!


The hotel’s Head Chef Pat Ryan will also be on hand offering stunning bite size samples of popular wedding fayre and on display will be a selection of Menus from the 1950’s and 1960’s of actual weddings that took place at the hotel.


Also present will be the hotel’s very own “resident” priest Fr Tim, who used to work at the hotel for many years and performs many weddings for brides and grooms celebrating their big day at the Castle Hotel. Fr Tim is also on hand to provide assistance with anyone who needs assistance planning their actual wedding ceremony.


The Vintage Wedding Fayre will feature a host of trusted suppliers specifically chosen and endorsed by the Castle Hotel. Vintage clothing boutiques such as Cork store Miss Daisy Blue will showcase their exquisite bridal dresses. Also in attendance will be award-winning dress designers Caroline Matthews of Caroline Atelier and Marion Murphy-Cooney, winner of the VIP Style Award.

Castle Hotel's Head Chef Pat Ryan's Valentines Tips!


Pat says why not ........'Start his or her day off right with breakfast in Bed! Pamper your sweetheart with a luscious breakfast in bed. Pat suggests;

Chocolate Waffles

Prep Time: 5 Min

Cook Time:10 Min

Ready In:15 Min

Servings : 5

Ingredients: 1 1/2 cups all-purpose flour, 3 teaspoons baking powder, 1/2 teaspoon salt, 1/2 cup white sugar, 3 tablespoons unsweetened cocoa powder, 1 cup milk, 2 eggs ,4 tablespoons butter, melted, 1 tablespoon butter, softened, 3/4 cup confectioners' sugar, 1/2 teaspoon vanilla extract, 1 teaspoon milk.

Directions: Preheat waffle iron. In a large mixing bowl, stir together flour, baking powder, salt, sugar and cocoa. Stir in milk, eggs and butter until mixture is smooth. To make hard sauce: stir together softened butter, confectioners' sugar, vanilla extract and milk. Sauce should be fairly stiff. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot with sauce!
